Quinoa Salad with Cucumber, Tomato, Mint & Feta


Quinoa is a fantastic superfood that is a good source of protein and has little carbohydrates, adding it to fresh ingredients like this makes a vibrant and fresh tasting salad. Ideal for hot summer lunches or evening meals. It works well on it’s own as a main meal or can be used as a side dish with barbecued meats.

Serves 2


110g Quinoa
4 Medium sized Tomatoes, chopped. Try to get different colours if you can, we have used both yellow and red.
Half a cucumber, chopped
Small red onion, finely chopped
2 tbsp fresh mint, chopped
2 tbsp olive oil
Juice of half a lemon
30g Feta, crumbled
Salt & Pepper


  1. Add the quinoa to 220mls of water in a saucepan and bring to the boil. Reduce the heat and simmer for 7 minutes. Remove from the heat and allow to sit for 5 minutes with the lid on. Check that all of the water has been absorbed. Allow the quinoa to cool.
  2. Whilst the quinoa is cooling add the tomatoes and cucumber to a colander, season with salt and toss well. Allow the cucumber and tomatoes to drain over a sink.
  3. When the quinoa has cooled add all of the ingredients to a large salad bowl, mix well and season to taste.
