Quinoa is a fantastic superfood that is a good source of protein and has little carbohydrates, adding it to fresh ingredients like this makes a vibrant and fresh tasting salad. Ideal for hot summer lunches or evening meals. It works well on it’s own as a main meal or can be used as a side dish with barbecued meats.
4 Medium sized Tomatoes, chopped. Try to get different colours if you can, we have used both yellow and red.
Half a cucumber, chopped
Small red onion, finely chopped
2 tbsp fresh mint, chopped
2 tbsp olive oil
Juice of half a lemon
30g Feta, crumbled
Salt & Pepper
- Add the quinoa to 220mls of water in a saucepan and bring to the boil. Reduce the heat and simmer for 7 minutes. Remove from the heat and allow to sit for 5 minutes with the lid on. Check that all of the water has been absorbed. Allow the quinoa to cool.
- Whilst the quinoa is cooling add the tomatoes and cucumber to a colander, season with salt and toss well. Allow the cucumber and tomatoes to drain over a sink.
- When the quinoa has cooled add all of the ingredients to a large salad bowl, mix well and season to taste.
